Have you ever eaten a tomato sandwich? My mom turned me on to tomato sandwiches years ago. One day she went out to the garden and came back with a big, juicy tomato, which she sliced thickly and put on toast with a little bit of mayo and a sprinkling of salt. It may sound like a sad, lonely sandwich without any meat or even other veggies, but it’s a wonderful way to enjoy the sweet and juicy flavors of a fresh, vine-ripened tomato.
After eating a truly delicious sandwich made with garlic basil mayo while in Vermont recently, I decided that some jazzed-up mayo would be scrumptious with a tomato and toast.
Garlic Basil Mayo
4 T mayonnaise (I used this)
1 clove garlic, minced
6 fresh basil leaves, finely chopped
Simply stir ingredients together in a small dish. To assemble the sandwich, spread the garlic basil mayo on toast and top with thick slices of tomato. Sprinkle with salt and pepper and enjoy!
Recipe makes enough mayo for 2 sandwiches.
