Quick and easy dinners don’t have to be boring! This simple recipe for Shrimp Scampi is full of flavor but takes just 30 minutes to make!
Pasta immediately comes to mind when I’m looking for a quick and easy weeknight meal. Penne and vodka sauce ready in 10 minutes? Yes please! But what about shrimp scampi? I recently discovered that I can make the delicious seafood dish at home in a mere 30 minutes, and the result was so good that I made a last-minute decision to photograph the meal and share it here on the blog!
8 oz linguine
2 T olive oil
1 lb. shrimp, peeled and deveined
3 cloves garlic, minced
1/2 tsp. red pepper flakes (or more if desired)
1/4 cup chicken broth
1/4 cup lemon juice
salt and pepper, to taste
zest of 1 lemon
2 T chopped parsley
1/4 cup freshly grated parmesan (or more if desired)
Cook the pasta according to package instructions and drain well.
Heat olive oil in a large skillet over medium heat. Add shrimp, garlic, and red pepper flakes. Cook the shrimp until pink, about 1 1/2 minutes per side. Add chicken broth and lemon juice to skillet and sprinkle with salt and pepper. Bring the mixture to a simmer, then remove the skillet from the heat and stir in the pasta, lemon zest, and parsley.
Garnish with grated parmesan and serve immediately. Leftovers will keep in an airtight container in the fridge for one to two days and can be reheated on the stove or in the microwave (just be sure to add a little more oil before reheating so it doesn’t dry out).
