If you are a cookie dough lover, this decadent, peanut buttery, chocolatey, scrumptious cake is about to become your new favorite thing. I know because I am a serious cookie dough lover, and this cake is my new favorite thing. It’s totally delicious and not too rich, so you can enjoy a big slice. Which is perfect, because birthdays call for big slices of cake, and this is my birthday cake, baked for me by my better half.
Cookie Dough Lover’s Cake: Vanilla Cake with Peanut Butter Chocolate Chip Cookie Dough Filling & Chocolate Buttercream Frosting
for the cake:
18 T unsalted butter, softened
2 1/4 cups sugar
3 cups all purpose flour
3 tsp baking powder
3/8 tsp salt
9 egg whites
1 1/4 cups milk
1 T vanilla
In the bowl of an electric mixer or a large mixing bowl, beat butter and sugar until light and fluffy (about 5 minutes). In a medium bowl, mix flour, baking powder, and salt. In another bowl, mix egg whites, milk, and vanilla.
Add a third of the flour mixture to the butter mixture and blend, then add half of the egg mixture. Add another third of the flour mixture, then the remaining egg mixture, and finally the last of the flour mixture. Scrape the bowl often while blending the mixtures together.
Divide the batter across two 8 inch cake pans and bake at 350 degrees for 30 minutes or until cake is golden and a toothpick inserted in the center comes out clean. Cool the cake in the pans on a wire rack for 15 minutes, then remove the cake from the pans and return them to the wire rack to cool completely.
for the peanut butter chocolate chip cookie dough filling:
6 T unsalted butter
1/2 cup brown sugar
1/4 cup sugar
1/4 cup peanut butter
1/4 cup milk
1/2 tsp vanilla
1 1/4 cups flour
1/4 tsp salt
1/2 cup semisweet chocolate chips
Add butter and sugars to the bowl of an electric mixer and beat until fluffy, about 2-3 minutes. Mix in peanut butter, milk, and vanilla. Add flour and salt and mix on low speed until incorporated. Stir in chocolate chips.
for the chocolate buttercream frosting:
3/4 cup shortening
3/4 cup unsalted butter
1 1/2 tsp vanilla
6 cups confectioner’s sugar
3 T milk
1/4 cup semisweet chocolate chips
Melt chocolate chips in a double boiler, then set aside to cool to about room temperature. Cream butter and shortening in the bowl of a large mixer. Add vanilla and mix well. Add sugar slowly – one cup at a time – beating well on medium speed and scraping the bowl often. When all sugar is added the icing will be dry. Then add milk and beat at high speed until the frosting is light and fluffy. Finally add the melted chocolate and beat until well blended.
to assemble the cake:
Place one layer of cake flat side down on a cake plate or stand. Top with the cookie dough filling and spread to cover the cake layer. Place the second cake layer on top of the filling flat side up. Frost the top and sides of the cake with the chocolate buttercream frosting and enjoy!
