Is it brutally hot right now where you live? I spent last weekend in Philly and am now back in Pittsburgh, and I can tell you that all of Pennsylvania is brutally hot.
In the middle of summer, when the temperatures spike, the only thing I want to eat is fruit. There’s nothing more refreshing on a hot summer day than fresh tropical fruit. Doesn’t a ripe, juicy pineapple just taste like summer? When mixed with plump and juicy tomatoes (another summer staple!) and habanero pepper for a little kick, fresh pineapple can easily become a delicious, tropical salsa!
Here I used this salsa as a marinade for pork, which I served over rice. But if you can’t even image turning on the oven in this heat, this salsa is also totally delicious on it’s own served with tortilla chips (and a margarita, while you’re at it!).
Pineapple Habanero Salsa
1 medium-sized tomato
1/2 red onion
1/2 pineapple (or 1 can diced pineapple)
3/4 habanero pepper, seeds removed
3 small garlic cloves
1 tsp. apple cider vinegar
Dice tomato, red onion, and pineapple. Mince habanero and garlic. Place ingredients in bowl and mix with apple cider vinegar.
Serving Suggestion: Marinate a pork loin in salsa for 1 hour. Cook pork lion in salsa and serve over rice. (Note: The acidity of the salsa will break down the meat, so for the best texture I recommend eating the marinated meat the same day you cook it.)
