Stuffed with cheese and berries and just a hint of sweetness, this dessert grilled cheese is great for dessert or brunch - or any time!
Today I have some VERY exciting news to share (and a very good excuse for why I'm a day late sharing this recipe)! We moved into our new house over the weekend! We're already unpacked, but we still have a good bit of organizing - and lots of decorating - to do. The house is already starting to feel like a home, and we're so excited to make it ours!
Amidst all the packing, moving, and unpacking, we were looking for plenty of easy meals . There was some takeout, some leftovers, and lots of meals eaten off of paper plates, but all of the meals during the move were simple.
I remember when I was six and my family was moving from Long Island to the Philadelphia suburbs. We spent a long day looking at houses, and my brother and I (my sister wasn't born yet) had been promised ice cream after dinner. By the time we finished house hunting it was late and we were too tired for dinner - so we just had ice cream for dinner instead!
This dessert grilled cheese is kind of like that. It could be dessert, or it could be a meal. It would make a delicious breakfast or brunch! Either was it's easy to make and totally tasty!
Maybe you're craving something ooey-gooey and cheesy. Or maybe you want something fruity and sweet. This dessert grilled cheese - with brie, blackberries, and honey grilled between thick slices of brioche - is the best of both worlds.

INGREDIENTS:
4 slices brioche
butter
½ lb. brie
6 oz. blackberries
3 T wildflower honey
DIRECTIONS:
Spread one side of each slice of bread with butter. Place 2 slices of bread, butter side down, in a large skillet. Top each slide of bread with slices of brie, blackberries, and a drizzle of honey. Top each with the remaining slices of bread, butter side up. Heat skillet over medium heat. Cook until first slices of bread are golden brown. Flip each sandwich with a spatula and cook for a couple more minutes, until second slice of bread is golden brown. Slice each sandwich in half and serve immediately.
