A simple heirloom tomato salad paired with fresh burrata cheese and grilled bread makes a delicious summer appetizer.
Tomatoes never get to be the star.
They're great in salads, completely necessary (in my opinion) on a burger, and refreshing in a summery pasta dish. But they rarely ever steal the show.
But this heirloom tomato salad puts the tomatoes front and center. It highlights the fresh summer produce in all its ripe, juicy glory.
I kept things simple and drizzled the tomatoes with a light, lemony olive oil dressing. Paired with fresh burrata and grilled bread, it's the perfect appetizer for a summer get together! Speaking from experience, it also makes a wonderful lunch or light dinner if you're looking for something easy and delicious.

4 large heirloom tomatoes, sliced
1 pint small heirloom tomatoes, sliced
8 oz. burrata
½ loaf of bread, sliced
for the dressing:
1 T honey
1 T olive oil
¼ tsp. lemon juice
pinch dried basil leaves
Place the sliced tomatoes and burrata on paper towels to soak up some of the excess liquid. Meanwhile, grill the sliced bread for a few minutes on each side until golden brown.
Make the dressing by mixing the dressing ingredients together in a small bowl.
Place the burrata on a platter and surround with tomatoes. Drizzle the dressing over the tomatoes and serve with the grilled bread.
