Weaving slices of bacon to create lattice bacon ensures the delicious crunch of bacon in every bite of these meaty, cheesy, buttery biscuit sliders.
I've always considered myself to be a sweet breakfast person, preferring pancakes to eggs, but these biscuit sliders have me reconsidering my breakfast preferences. Who would have thought I'd go to bed dreaming of little savory breakfast sandwiches?!
Alex, on the other hand, lives for a good breakfast sandwich. He's eaten A LOT of breakfast sandwiches over the years, and he has high standards for what makes a breakfast sandwich superb. So when he couldn't stop singing his praise for these sliders, I knew this recipe was a winner!
We're using a classic breakfast sandwich combo: bacon, egg, and cheese. Because there's no need to totally reinvent the wheel when it comes to a good breakfast sandwich. BUT we'll elevate this classic by adding a few fun twists that really take the sandwich from good to OMG.
- We'll use a buttermilk biscuit for an extra buttery, flaky "bun". I swear by this quick and easy buttermilk biscuit recipe, but store-bought biscuit dough will also work if that's your preference.
- We'll use a basil mayonnaise to add a little boost of flavor. Just stir some fresh, chopped basil leaves into your favorite mayo and voilà! It's seriously the easiest thing ever, and it makes a HUGE difference!
- MOST IMPORTANTLY...we're going to make lattice bacon. As in, we're going to weave together slices of bacon to create a big square of bacon that will sit atop our sandwich. It's beautiful, like the top of a lattice pie, and so much easier to do than you might think. And it's glorious because it means you'll get a mouthful of bacon with every bite of your slider! No slices of bacon slipping out of your sandwich leaving you with bacon-less bites (the horror!).
Here's how to make lattice bacon (see the GIF below for reference!):
- Place 3 slices of bacon next to each other vertically on the baking sheet.
- Pull the bottom of the center slice of bacon upward and lay another slice of bacon horizontally across the bottom third of your first three slices.
- Replace the center piece of bacon so that it is now covering the center of the new slice of bacon.
- Next pull the two outer pieces of bacon downward and lay another slice of bacon horizontally across the center of the first three slices.
- Replace the two outer slices of bacon so that they are covering the ends of the new slice of bacon.
- Finally, pull down the top of the center slice of bacon and lay another slice of bacon horizontally across the top third of your first three slices.
- Replace the center slice of bacon so that it covers the center of the new slice of bacon.
These lattice bacon, egg, and cheese biscuit sliders are how I want to start every morning, but I know that dads everywhere will be especially grateful if you make these for Fathers' Day!
Lattice Bacon, Egg, and Cheese Biscuit Sliders
Servings=2 (makes 4 sliders)
INGREDIENTS:
4 buttermilk biscuits, each 3 inches in diameter (*see note under "Directions")
⅓ cup mayonnaise
1 Tbsp. finely chopped fresh basil
⅓ of a 1 lb. package of bacon (regular cut, not thick cut)
2 eggs
Butter, for cooking eggs
⅙ lb. nice cheddar cheese, sliced
Salt and pepper to taste
DIRECTIONS:
*Make buttermilk biscuits following these recipe instructions, but cut the biscuits using a 3 inch circle cutter. Baking time and all other recipe instructions do not change. You may be able to get 5-6 biscuits using the slightly larger cutter, but you'll need 4 for 2 servings of these sliders.
make the basil mayonnaise:
Add mayonnaise and freshly chopped basil together and stir until mixed. Set aside.
make the lattice bacon:
Slice 1 lb. bacon package into thirds vertically. Pull out one of the thirds to use for this recipe, and save the remaining bacon for another use. Slice each bacon slice in half again horizontally. You'll now have about 30 3 inch long bacon slices, and you'll need 24 of the slices for the lattice bacon. You'll use 6 slices of bacon for each lattice, and you'll make 4 lattices.
Line a rimmed baking sheet with foil and preheat the oven to 400°F. To make each lattice, place 3 slices of bacon next to each other vertically on the baking sheet. Pull the bottom of the center slice of bacon upward and lay another slice of bacon horizontally across the bottom third of your first three slices. Replace the center piece of bacon so that it is now covering the center of the new slice of bacon. Next pull the two outer pieces of bacon downward and lay another slice of bacon horizontally across the center of the first three slices. Replace the two outer slices of bacon so that they are covering the ends of the new slice of bacon. Finally, pull down the top of the center slice of bacon and lay another slice of bacon horizontally across the top third of your first three slices. Replace the center slice of bacon so that it covers the center of the new slice of bacon. Your bacon slices should now be woven into a neat over-under pattern that measures about 3 inches square. Once you've created 4 lattices, bake them on the foil-lined, rimmed baking sheet (along with any remaining slices of bacon) at 400°F for 15 minutes or until the bacon reaches your desired level of crispiness. Use tongs to transfer the bacon lattices to a plate lined with a paper towel to drain.
cook the eggs:
Add a tiny bit of butter to a small nonstick skillet. Crack an egg into a small bowl and whisk with a fork until the yolk and white are well blended. Heat skillet on medium-low heat until the butter is melted and the skillet is hot. Add egg and allow it to cover the bottom of the skillet, cooking it like an omelet. Add half of the cheese slices over half of the cooking egg and flip other half of egg "omelet" over cheese slices. Finish cooking so egg is cooked and cheese is melted. Transfer the cheesy egg to a cutting board and slice in half vertically so that you have two triangles of cheesy egg. Repeat with other egg and rest of cheese.
assemble the sliders:
Slice biscuits in half and spread the top half of each biscuit with basil mayonnaise. On the bottom half of each biscuit, place one egg triangle and one bacon lattice. Add salt and pepper to taste. Replace top halves of biscuits to close the sandwiches. Serve and enjoy!
