Ingredients

Blueberry Simple Syrup

  • ½ cup granulated sugar
  • ½ cup water
  • ¼ cup fresh blueberries

Blueberry Mojito Mocktail

  • 6 fresh mint leaves
  • 4 fresh blueberries (plus more for garnish)
  • ½ ounce fresh lime juice
  • 1 ½ ounces blueberry simple syrup
  • ice cubes
  • sparkling water
  • lime wheel or wedge, for garnish
  • mint sprig, for garnish

Instructions

Make the blueberry simple syrup.

  • In a small saucepan combine sugar, water, and blueberries. Cook over medium heat until the sugar dissolves completely. Use a muddler or other tool to crush the blueberries.
  • Strain the syrup into a glass jar and let cool to room temperature.

Make the mocktail.

  • Add mint leaves and blueberries to a glass with lime juice. Muddle the berries and mint.
  • Add blueberry simple syrup.
  • Fill glass with ice cubes.
  • Top off with sparkling water (leaving a little bit of room in the glass for garnishes). Gently stir the drink just to blend without losing the carbonation.
  • Add lime wheel or wedge, mint sprig, and fresh blueberry garnish. Enjoy!
