- 8 ounces semisweet chocolate baking bar, chopped
- 1 ½ cups unsalted butter, room temperature
- 4 ½ cups confectioners' sugar
- 1 teaspoon fine sea salt
- ½ teaspoon espresso powder
- 3 ounces Irish whiskey
Melt chocolate in a double boiler and stir until smooth. Remove from heat and set aside to cool slightly. In the bowl of a stand mixer using the whisk attachment (or in a large bowl using an electric hand mixer), beat butter until smooth. Add confectioners' sugar, salt, and espresso powder and beat until well combined.
Add melted chocolate and beat until frosting is light and fluffy.
Storage: Frosting can be made ahead of time and stored in an airtight container in the fridge for up to a week. Let the frosting come to room temperature and briefly re-whip it with a stand mixer or electric hand mixer so that it's soft and fluffy before using.
Cakes or other desserts that have been decorated with frosting can be stored on a covered cake plate or stand at room temperature for up to 3 days or in the fridge for up to 5 days.
