Pumpkin Spice

These soft pumpkin cookies have incredible spice flavor, plus they’re decorated with festive cream cheese frosting pumpkins.

Pumpkin Purée







Make the cookie dough. Whisk together flour, cornstarch, baking soda, baking powder, salt, and spices.

Step 1

Cream the butter and both sugars until light and fluffy.

Step 2

Add egg yolk, pumpkin and vanilla and beat until well blended.

Step 3

Add the dry ingredients and stir just until combined.

Step 4

Scoop 1 ½ Tablespoon balls of cookie dough onto a baking sheet lined with parchment paper.

Step 5

Bake cookies at 350°F for 12 minutes, or until cookies are puffed in the center with golden edges.

Step 6

Make the frosting by beating cream cheese and butter with vanilla, salt, and confectioners' sugar until creamy.

Step 7

Color the frosting using gel food coloring and add to piping bags.

Step 8

Pipe lines of orange frosting onto cookies to form a pumpkin shape.

Step 9

Pipe green frosting onto cookies to form stem and leaves.
