Brioche Cinnamon Rolls

These brioche cinnamon rolls are the absolute best, made with a plush and tender dough, sweet cinnamon spice filling, and vanilla cream cheese icing.

Spices

Make the brioche dough. Pour the warm milk into the bowl of a stand mixer and add the yeast.

Step 1

Add the egg, melted butter, flour, sugar, and salt and mix until the ingredients are blended.

Step 2

Using the dough hook, beat until the dough is soft and smooth.

Step 3

Form the dough into a ball, transfer it to a lightly greased bowl, and cover with a clean dish towel.

Step 4

Let dough rise until doubled in size, then refrigerate the dough for at least 1 hour.

Step 5

Prep the cinnamon filling. In a small bowl, whisk together the sugars and spices. Set aside.

Step 6

Place dough onto a lightly floured surface and roll into a rectangle that's 9 inches x 12 inches.

Step 7

Spread softened butter over the dough and sprinkle the cinnamon sugar mixture evenly over the butter.

Step 8

Beginning at the short end, roll dough tightly to form a log that's 9 inches long.

Step 9

Slice the log into 6 equal pieces.

Step 10

Place the rolls cut side up onto your baking sheet or pan.

Step 11

Let the rolls rise until they've doubled in size.

Step 12

Once the rolls have risen, pour heavy cream over them immediately before baking.

Step 13

Bake the rolls at 375ºF for 15-20 minutes, or until they're golden brown.

Step 14

Make the cream cheese icing. Beat cream cheese, butter, salt, vanilla, and confectioners' sugar until blended and smooth.

Step 15

Spread the icing over the still warm cinnamon rolls and enjoy!
