In a saucepan, add sugar, sifted cornstarch, and salt. Slowly add lemon juice and cold water, stirring until smooth.

Add the beaten egg yolks to the saucepan and stir until the yolks are thoroughly blended with the lemon juice mixture. Then add the butter.

Slowly add boiling water to the saucepan, stirring constantly until the mixture is cohesive.

Step 3

Place the saucepan over medium heat and continue to stir the mixture gently until it comes to a gentle boil. The mixture will thicken as it heats.

Step 4

When the mixture reaches a gentle boil, reduce the heat to medium-low and simmer slowly while you continue to stir it gently.

Step 5

Remove from the heat and transfer the lemon curd to a heat-safe bowl. Stir in grated lemon peel.
