These cranberry shortbread crumble bars have earned a permanent spot on my holiday dessert tables and cookie trays! The unfussy recipe pairs buttery shortbread with a jammy, fresh cranberry filling with a touch of orange and a perfectly golden shortbread crumble topping.
As soon as I nailed the final recipe test for these cranberry shortbread bars, I knew it's a recipe that I'll be baking every holiday season for the rest of my life. The bars are easy to make, and I can't believe how much flavor comes from such a simple ingredient list.
The irresistible combination of buttery, melt-in-your-mouth shortbread paired with tart fruit reminds my of my Grandma's lemon bars. But this time, just like with my popular cranberry walnut bread, we're pairing tart cranberries with a hint of orange to brighten up the tart berry flavor. The sweet-tart flavor of these bars will have everyone coming back for seconds!
Why You'll Love This Recipe
These simple yet festive cranberry crumble bars check all my holiday baking boxes:
- Easy to Make - You don't need to be an experienced baker to nail this recipe on the first try! The shortbread dough comes together quickly, and the cranberry filling is easy to pull off.
- One Shortbread Dough in One Bowl. The same buttery dough is pressed into the pan as the crust and crumbled over the top as the topping. You mix it once and use it twice, saving time and minimizing dishes!
- Festive - The deep ruby-red cranberry layer makes these bars naturally festive without any extra effort!
- Make-Ahead Friendly - These bars stay fresh for days! I actually think they taste even better the next day after the flavors have had a chance to really meld. They're a perfect make-ahead option for holiday parties or cookie exchanges.
These bars are a wonderful addition to any holiday recipe lineup: they're festive, easy to transport, and they keep well for days.
Ingredient Notes & Substitutions
See recipe card at the bottom of this post for full ingredient list and measurements.

Cranberries: Fresh or frozen both work beautifully in this recipe! Since we're pre-cooking the cranberry filling to thicken it, we don't need to worry about the extra moisture that the frozen berries give off when they bake. If you're using frozen, there's no need to thaw them first.
Orange Zest and Orange Juice: The sweet and citrusy flavor of the orange balances the tartness of the cranberries, improving the flavor of the filling.
Cornstarch: A small amount of cornstarch helps the cranberry filling thicken up properly so that you get clean, beautiful slices when you cut the bars.
Unsalted Butter: Softened butter is key here! It blends smoothly with the powdered sugar and creates that classic melt-in-your-mouth shortbread texture. Make sure yours is a cool room temperature before you begin.
Confectioners' Sugar: We're using confectioners' sugar (aka powdered sugar) in the shortbread for a softer, more delicate texture than you'd get with granulated sugar.
Special Equipment
In addition to essential baking equipment (like a an 8x8 pan and a saute pan), I recommend some special tools for making this recipe.
- A stand mixer or electric hand mixer, for mixing the shortbread dough.
- A zester, for zesting the orange.
- A sauté pan, for pre-cooking the cranberry filling.
Step-By-Step Recipe Instructions
See recipe card at the bottom of this post for detailed recipe instructions.

Step 1: Make the shortbread dough. Beat butter, confectioner's sugar, vanilla, and salt until smooth and well blended.

Step 2: Add flour and baking powder and mix until combined and dough comes together.

Step 3: Add ⅔ of the shortbread dough to an 8x8 baking pan lined with parchment paper and gently press it down to create an even crust. Chill the remaining shortbread dough in the fridge.

Step 4: Par-bake the shortbread crust at 350°F for 18-20 minutes or until the edges turn lightly golden. Let the crust cool slightly.

Step 5: Make the cranberry filling. Cook cranberries, sugar, cornstarch, orange zest, and orange juice over medium-low heat for about 15 minutes or until the berries start bursting. Let cool slightly.

Step 6: Pour the cranberry filling over the par-baked crust, spreading it to the edges. Crumble the remaining shortbread dough over the cranberry filling.

Step 7: Return the pan to the oven and bake the cranberry shortbread bars for 25 to 30 minutes, or until the crumble topping is golden.
Allison's Top Tips
Don't skip par-baking the shortbread crust. Partially baking the crust before the filling goes on top gives you a sturdy, structured base rather than a soft, underbaked bottom layer.
Keep the reserved third of shortbread dough cold while the crust par-bakes. Cold dough crumbles more easily and creates that beautiful, craggy topping - if the dough warms up too much, it will press together instead of crumbling.
Be patient with the cranberry filling. Cooking it over medium-low heat for about 15 minutes gives the berries time to burst and the filling time to thicken so that it will set and not be runny after it's baked in the bars. I use this same pre-cooked filling method with my blueberry pie filling to ensure a fully set pie, and it's absolutely worth the extra step.
The bars are finished baking when the crumble topping begins to turn golden brown. The cranberry filling may bubble slightly around the edges, which is a great sign that it's thickened properly!
Double Recipe in a 9x13 Pan: To serve a crowd, double the recipe and bake it in a 9x13 pan. Add about 5 minutes to the bake time.

Storage Instructions
Room Temperature: Store bars in an airtight container at room temperature for up to 3 days.
Refrigerator: For longer storage, seal the bars in an airtight container in the fridge for up to 5 days. For the best taste and texture, let the bars sit at room temperature for 15 to 30 minutes before enjoying.
Freezing: To freeze, wrap the bars in plastic and seal them in an airtight container before freezing for up to 2 months. Thaw bars in the fridge or at room temperature before eating.
