This blackberry ginger mojito made with fresh blackberries and a blackberry and ginger-infused simple syrup puts a fruity and invigorating spin on a classic mojito cocktail!
In a small saucepan combine sugar, water, blackberries, and grated ginger. Cook over medium heat until the sugar dissolves completely. Use a muddler or other tool to crush the blackberries.
Strain the syrup into a glass jar and let cool to room temperature.
Make the cocktail.
Add mint leaves and blackberries to a cocktail shaker with lime juice. Muddle the berries and mint.
Add rum, simple syrup, and ice cubes. Shake until well blended.
Fill glass with ice cubes and strain cocktail into glass.
Top off with club soda (leaving a little bit of room in the glass for garnishes). Gently stir the drink just to blend without losing the carbonation.
Add lime wheel or wedge, mint sprig, and fresh blackberry garnish. Enjoy!

Storage: Mojitos should be enjoyed immediately, but blackberry ginger simple syrup can be stored in a sealed glass jar in the fridge for up to a week.
