This non-alcoholic blueberry mojito mocktail combines fresh blueberries, mint, and lime juice to create a light and fruity drink that’s totally refreshing!
In a small saucepan combine sugar, water, and blueberries. Cook over medium heat until the sugar dissolves completely. Use a muddler or other tool to crush the blueberries.
Strain the syrup into a glass jar and let cool to room temperature.
Make the mocktail.
Add mint leaves and blueberries to a glass with lime juice. Muddle the berries and mint.
Add blueberry simple syrup.
Fill glass with ice cubes.
Top off with sparkling water (leaving a little bit of room in the glass for garnishes). Gently stir the drink just to blend without losing the carbonation.
Add lime wheel or wedge, mint sprig, and fresh blueberry garnish. Enjoy!
Notes
Mojitos are best when enjoyed immediately. The blueberry syrup can be made ahead of time and stored in a sealed jar in the fridge for up to two weeks.Want to make a blueberry mojito cocktail instead? Added 1 to 2 ounces of white rum when you add the lime juice. You'll need a little bit less sparkling water to fill the glass.
