Strawberry Pimm's Cup with Citrus, Cucumber, & Mint
Packed with fresh strawberries and citrus along with cucumber and mint, this Strawberry Pimm's Cup puts an extra fruity spin on the classic British cocktail.
Before mixing the cocktails, set aside some of the produce to use for garnish.
Add the Pimm's and the leaves from the mint sprig to a collins glass and gently muddle the mint.
Add ice cubes to the glass along with fruit and cucumber slices.
Top with lemon soda or ginger ale and gently stir to combine.
Garnish with whole strawberry and a mint sprig.
Notes
Pimm's Cup Pitcher: This cocktail can easily be made in a pitcher. Muddle the leaves of 6 mint sprigs in a pitcher with 1 ½ cups (12 ounces) of Pimm's No. 1. Add ice along with sliced fruit (1 pint of strawberries, 2 oranges, and 2 lemons) and cucumber (1 small), and top with 4 ½ cups (36 ounces) lemon soda or ginger ale. Stir gently to combine and serve with fresh garnish. Makes 6 servings.Lemon Soda vs. Ginger Ale: Lemon soda makes a British-style Pimm's Cup, while ginger ale is used in a New Orleans-style Pimm's Cup. Use whichever you prefer. If opting for lemon soda, I recommend Sanpellegrino Limonata.
