This chocolate buttercream is adapted from my classic American buttercream frosting recipe, and I tested this chocolate version countless times to make sure the flavor and texture are perfect!
The secret to that delightfully rich, dark chocolate flavor is to use Dutch processed cocoa powder. And since cocoa powder is drying in recipes, an extra bit of milk helps to keep the frosting smooth and fluffy.

Ingredient Notes & Substitutions

Cocoa Powder - I use Dutch processed cocoa powder and highly recommend it for this recipe. Dutch processed cocoa is darker and smoother than natural unsweetened cocoa, giving this frosting a deeper chocolate flavor and a gorgeous deep brown color. Both types of cocoa will work, but Dutch processed is my top pick. If you can't find it in the baking aisle at your local grocery store, I often order it online.
Butter - As always, I recommend using unsalted butter so that we can control the amount of salt in the frosting. Make sure your butter is a cool room temperature before you begin.
Confectioners' Sugar - Confectioners' sugar (aka powdered sugar) helps to create a frosting that's ultra smooth. Don't substitute regular granulated sugar, which will create a gritty frosting.
Whole Milk - Milk is what takes this frosting from thick to fluffy. Whole milk (or even heavy cream) gives the best texture, but lowfat milk or non-dairy milks will also work.
Salt - A pinch of salt helps to balance the sweetness and enhance the chocolate flavor.
Special Equipment
You'll need a stand mixer or an electric hand mixer for beating the butter and mixing the frosting.
I also strongly recommend a sifter for sifting the cocoa powder and confectioners' sugar to help ensure a lump-free frosting. I use this simple sifter, and it will last me a lifetime.

Step 1: Beat butter until smooth. Add vanilla and salt and beat until blended.

Step 2: Add cocoa powder and beat well. Add sugar slowly, beating until well blended. The frosting will be slightly dry.

Step 3: Add milk and beat on medium high speed until the frosting is light and fluffy.
Allison's Top Tips
Cool room temperature butter is the key. Cold butter won't cream properly, and melted butter will make your frosting greasy. Set it out about 30 minutes before you plan to start mixing.
Don't skip sifting the cocoa powder and confectioners' sugar. This takes an extra minute but makes a real difference in getting a smooth, lump-free frosting.
Scrape the bowl often using a rubber spatula while you're mixing the frosting to make sure everything gets blended in evenly.

Storage Instructions
Room Temperature: Frosting can be stored in an airtight container at room temperature for up to 3 days. The sugar acts as a preservative, so it stays safe and fresh at room temperature for a few days.
Refrigerator: You can also store frosting in an airtight container in the fridge for up to a week. Let the frosting come to room temperature and briefly re-whip it with a stand mixer or handheld electric mixer so that it's soft and fluffy again before using.
Cakes or other desserts that have been decorated with chocolate buttercream frosting can be stored on a covered cake plate or stand at room temperature for up to 3 days or in the fridge for up to 5 days. Note that for cakes and cupcakes, the fridge will cause them to dry out more quickly.

- 1 ½ cups (339 grams) unsalted butter room temperature
- 1 Tablespoon (14 grams) vanilla extract
- 1 pinch fine sea salt
- ¾ cup (63 grams) cocoa powder sifted (I like Dutch processed cocoa powder best)
- 4 ½ cups (509 grams) confectioners' sugar sifted
- 4 ½ Tablespoons (63 grams) whole milk
Instructions
- In the bowl of a stand mixer using the paddle attachment (or in a large bowl using a handheld electric mixer), beat butter on medium-high speed until smooth.1 ½ cups (339 grams) unsalted butter
- Add vanilla and salt and beat on medium-high speed until blended.1 Tablespoon (14 grams) vanilla extract, 1 pinch fine sea salt
- Add cocoa powder and beat well on medium speed. Scrape the bowl.¾ cup (63 grams) cocoa powder
